Everyday large volumes of fats, oils and grease (known as “FOG”) are poured down the drain systems of restaurants and food service kitchens in institutional and commercial establishments.  These high viscosity fats and cooking greases solidify when cooled and readily combine with other disposed solids in drain lines causing internal plumbing blockages (with attendant foul odors) and sewer back-ups.
