Issue Spotlight:  Cutting Through the “FOG” in Restaurant Grease Traps

Problem:  Grease Build-up in Commercial Kitchen Drains

Restaurants and other food service businesses generate large amounts of fats, oil, and grease (“FOG”) every day.   Grease Traps, which generally take the form of plastic or concrete containers installed under the sink in commercial kitchens, function to separate oil, grease and solids from the flow of liquid entering the sanitary sewer line.

Grease Traps capture the oil and grease from the flow of wastewater by slowing down the flow of hot greasy water through the grease trap (actually a tank) and allowing it to cool. As it cools, the grease and oil separate out of the water and float to the top of the trap. The cooler water continues to flow down the drain pipe to the sewer while baffles prevent the accumulated grease and oil from flowing out of the grease trap into the sewer system.

Grease traps can be a major problem for restaurants and other food processing establishments when they are not cleaned properly on a regular basis. Routine cleanings keep odors to a minimum, inhibit grease and rancid oils from emulsifying, prevent blockage in the drainpipe, and keep the system operating properly. Signs that your grease trap is due for a cleaning are slow running drains, backups, gurgling in the pipes, and bad odors.

Chemical solvents, hot water, caustic nor emulsifying solutions should ever be used to clean out the grease trap.  Conversely, removing the trap cover and manually scooping out any grease or oil that has accumulated on top is never a pleasant task.
